My next upcoming event is the Homespun event on November 4th. It’s based on the diversity of Winnipeg and drawing inspiration from the people that make Winnipeg special.

“Soup”
A hearty vegetable stew of pea, corn and squash, sliced bannock and creamy potato champ clapshot.

 

“Vegetables”
Homemade tofu & okara with mushrooms, chickpea aioli, microgreens and brunoise carrot.

 

“Pasta”
Dill pasta with roasted corn, goat cheese, parsley oil, pickled mustard seed, scallion, and beet veloute.

 

“Salad”
Chow of pineapple, mango, & chilis, curried chickpeas, puffed “doubles” and candied fruit.

 

“Palate Cleanser”
Salabat iced tea shot with roasted ginger.

 

“Entree”
Beef Wellington with mushroom gravy, tourtiere of lamb and pork, mashed potatoes.

 

“Sweet Endings”
Assorted sweets, candied nuts, jellies, caramels, and truffles. 

A little about me

Steve Strecker

Chef Steve Strecker, RSE – although a Red Seal Endorsed chef, I have often disliked the chef title. I found that the separation that the title gives from your staff is misleading. Firmly believing that any chef is only as good as the staff and friends he holds is key to their success. Hachere is a shiny example to this and demonstrates what can be achieved when the ego of the title is put aside.

My career started when I was 15. I worked my way through many restaurants before attending Red River College and acquiring my seal. Before starting Atomic Dinner Rolls I ran ERA Bistro in the Canadian Museum for Human Rights as Executive Chef. While there I won Restaurant of the Year from Ciao Magazine for my creative use of ingredients and commitment to local suppliers and Fairtrade products.
